This FOUR DAY AQF Level III program is designed to provide participants with the necessary knowledge and understanding of cellar operations, beer reticulation and postmix systems and the operations and management of the stores area of a hospitality operation.

Course Aim

Details from SIT07 Tourism, Hospitality & Events Training Package -

 

Objectives

Participants will learn about:

  • Operating and maintaining bulk dispensing and beer reticulation systems
  • The use and maintenance of refrigeration systems
  • Correct ordering procedures and setting par stock levels
  • The correct methods to store, rotate, issue and reconcile cellar stocks
  • Conducting stocktakes and maintaining stock records

 It is possible for students to attend the stock modules only if they are not interested in the Cellar module.

However Receive and Store Stock is a prerequisite for Operate and Monitor Cellar Systems and must be completed before the Cellar course can be attended.

Certification

On successful completion:

  1. A Nationally recognised Statement of Attainment for–
    SITHFAB227A
    "Operatec and monitor cellar systems”
    SITXINV001A- "Receive & Store Stock”
    SITXINV002A- "Control & Order Stock”
    as part of a Certificate III in Hospitality SIT30707
